A mill town that outlived its mill

Caspar grew up around a lumber mill that ran from the 1860s until the middle of the last century, with the village housing the people who worked it. When the mill closed, most such towns on this coast disappeared entirely. Caspar didn’t — it held on as a small community with a hall at its center, which is still where the weddings, memorials, and dances happen. That continuity is unusual here, and you can feel it.

Can you do a long table outdoors near the beach?

We can, and it’s worth doing here. Wind is the real variable on this stretch, so we’ll build a menu that survives it and have a sheltered plan B. Open-fire and tasting-menu evenings are $275 per person.

Is Caspar too small for you to travel to?

No — it’s inside our radius and about five minutes from home. There’s no travel charge.
